The limited-time dining experience celebrates Penang’s vibrant hawker culture through a collaboration with four renowned Penang culinary veterans, each bringing decades of expertise to the buffet table.

Authentic Penang Hawker Specialities by Culinary Legends
At the heart of Heritage of Penang is an impressive line-up of traditional dishes prepared by celebrated Penang hawker specialists alongside Executive Chef Andy Oh and the Edge culinary team.
Chef Toon Chin Hye of Ah Soon Fried Oyster showcases his renowned Fried Oyster Omelette, while Chef Tan Kim Chong highlights the aromatic flavours of Peranakan cuisine through dishes such as Nyonya Otah, Nyonya Curry Kapitan and Nyonya Perut Ikan. Chef Tan Pow Lai brings more than five decades of craftsmanship to his Fresh Hand-made Popiah, featuring delicately hand-rolled popiah skins.
Dessert lovers can also look forward to Chef Kong Chee Thiam’s signature Apam Balik, also known as Min Jiang Kueh, which has attracted a loyal following at Penang’s Northam Beach Café for more than a decade.

Executive Chef Andy Oh further pays tribute to Penang’s hawker heritage with his signature Penang White Curry Noodle with Pork Blood Curd, served in a rich coconut broth with house-made regional sambal, prawns, cuttlefish, cockles and taupok.
Another highlight is the signature Char Kway Teow, stir-fried over intense heat to achieve the distinctive wok hei associated with this popular Penang classic.
The buffet also features favourites including Nyonya Mango Kerabu, Loh Bak, Char Moi, Assam Pedas Fish, Too Kar Chor and Inchi Kabin. Sweet treats such as Muah Chee, Penang Tau Sar Piah, Durian Crepe and Penang Cendol complete the Penang-inspired experience.
